Bickfords Big Apple Pancake

If you’re from New England or at least Massachusetts you’ve probably been to Bickford’s at least once in your life for their breakfast all day and no trip to Bickford’s is complete without a Big (or more likely Baby) Apple a la mode! On their website they describe it simply “Our specialty. It takes a little longer, but is worth it!” I think that pretty much says it all.

I don’t like standard pancakes but, give me crepes or a Bickford’s Big Apple (German Pancake) and I am a happy girl! Basically the Big Apple is a thick pancake covered with cinnamon sugar apples and it’s just divine!  Top it with your favorite vanilla ice cream and you have the best bad for you breakfast EVER!

I found this recipe online and half way through cooking it I realized it needed more brown sugar sprinkled on top so I added some more brown sugar and cinnamon to make it perfect. I would also change the cook temp to 400 instead of 425 and I did cook it a teeny bit longer than 15 minutes.

Bickford’s® Big Apple Pancake

1/2 cup all-purpose flour
1/2 cup milk
2 eggs, beaten
2 tablespoons butter, melted
2 medium apples, peeled, cored, and sliced
1/2 cup light brown sugar, packed
1 teaspoon cinnamon
Pam (for coating pie pan) – I used a cake 9″ cake pan

Spray pie pan with Pam or other cooking spray.

Combine flour, milk, and eggs.

Pour melted margarine in 9-inch pie plate. Pour batter into pan.

Combine apple slices, brown sugar, and cinnamon. Place evenly over batting in pie pan.

Bake in 425 degree oven for 15 minutes.

Servings: 2

    We have a desert like that here. It is called a pizookie (SP?) It is a pizza cookie that is served with lots of Ice Cream. They take cookie dough and cook it in a pizza pan in a pizza oven. Then they serve it piping hot!! YUM., I love apples, a big apple pancake would be fantastic right now.

    OMG I treat myself going to bickfords to get a baby apple.. its is out this world. Im starting weight watcheers.. and so Im going to have to make one this weekend..
    I wish BICKFORDS didnt close down so many of the their resturants.. we all rave about the Baby Apple.. its there SIGNATURE PLace..
    now they are closing them down .. NOT FAIR

    I used to work at Bickford’s as a waitress in Mystic, CT from May 1998 until September 2001. The restaurant was new to that location and I made good tips. It helped pay for my first car and kept me sane (and tired) during my single years. I made several friends (will never forget Kathy, Jean and Jamie Boy…”welcome to my world!”) .We served lots of Big Apples, especially to tourists on Saturday mornings.

    I wish Bickfords would sell the German pancake mix in supermarkets. I used to make them at the Galvin Blvd location, back in the early eighties. It came in measured bags ,and all I had to do was add liquid and eggs. I think they could get Shaws and Stop&Shop to carry it . I now work for a supermarket chain in Atlanta,and wish there was someone who sold a pancake that good.

    I wish i have millions of cash so i can have this kind of big apple every day in texas i just want someone to that works at bickfords to tell me the recipe and i will not tell noone i will promise if i do i want you who ever the to call the cops if you visit texas and you see a bussiness running or catch me telling the recipe

    Hayes Bickford was one of my favorite places to eat. My children and grandchildren were introduced to the Big Apple and became fans.
    Bickford’s has closed in my area and about the only thing I really get a craving for is the Big Apple. Thanks for recipe,

    Its actually a crepe type batter and the eggs are folded into the mix not beaten as it was incorrectly explained above. I know because I use to work for bickfords. Its easy to make but messy if done correctly duo to the flipping of the mix. Its starts on the burner and when one side is cooked its flipped and finishes in a 450 degree oven where it rises. I use to eat one almost every shift. A scoop of vanilla ice cream on top makes it the best.

    I love the simple recipe. I put a banana in the pan after the mix and sprinkled the sugar and cinnamon. Then I put strawberries, sugar and butter in a pan until it thickened. Poured it over the top and WOW my honey LOVES it. Said it”s the best breakfast he has ever eaten!…Thanks!
